Fava Bean Crostini

Serves 4


1CupFresh Fava Beans, Shelled
1⁄2CupOlive Oil
1⁄2TeaspoonFresh Lemon Zest
1TeaspoonFresh Lemon Juice
2 Cloves Garlic
1 French Baguette


1. Bring pot of water to boil and preheat oven to 350 degrees.

2. Add fava beans to boiling water. Boil for 3-4 minutes.

3. Drain fava beans and immediately put into  an ice water bath.

4. Gently peel the skin off the beans.

5. Put beans, 1/4 cup of the olive oil, lemon juice, and garlic in a food processor and pulse until smooth.

6. Cut baguette into slices, place each slice flat in a pan.

7. Drizzle remaining olive oil onto slices.

8. Bake bread in oven until golden, about 8-10 minutes.

9. Top each slice of toasted bread with fava bean spread.

**Garnish with arugula or other spicy green.
